What Happened to Chicken?

A little deviation from Tuesday because I am in sticker shock! With all the sewing I have been doing I have not spent much time in the grocery store.  This week is the time to do the big shopping.  Imagine my surprise yesterday when I went to purchase a package of chicken breasts and they were $13.75! That is for 4 breasts!  What happened?  There was no way I was doing that.  Next to the breasts were the packages of thighs and they were $4.97 for 9 thighs.  Why 9 and not 8?  Who knows!  But I have a great recipe for chicken thighs, so in the cart they went.  And with the prices of meat and poultry apparently out of control
(and I say meat because my normal roll of hamburger beef for $2.19 is now $3.95) I thought I would share this recipe that our family has loved for years. I am not a fancy cook, so simple is what I do!

Chicken Oregenata


Begin with a package of boneless, skinless, chicken thighs.
Combine the juice of a small lemon and 2 garlic cloves and coat chicken with it.


In another bowl combine in a 1:4 proportion:

4 parts
Italian Breadcrumbs
1/2 tsp pepper
1/3 tsp salt

1 part
Parmesan cheese

Dredge the coated chicken through the breadcrumb/cheese mixture.  Place in 9 x 13 greased dish.  Drizzle with olive oil.




Bake at 450 for 20 minutes.  Remove from oven and add diced tomatoes and return to oven for 10 minutes.


Tonight I served baked new potatoes and salad.  This is an easy meal and always well received.

  1. Yes, the prices at the grocery store are ridiculous. Good for you for not paying them. I can't pay them! We're eating several meatless meals a week and so far I have not found eggs to have gone up much.

  3. Wonderful recipe! I will definitely be making this! Thanks so much for sharing! I agree, I wouldn't pay that either. I am hoping to get a bountiful harvest from our garden this year to help offset grocery cost.

  4. Smart shopping is a must again. Coupons are again popular again in our area. That does take time though.

    1. Yes, I find with coupons you have to buy name brands. I most often don't so it's hit or miss!
